The World's Greatest Enchilada Recipe!!

  This recipe will demand about 45 minuts of prep time. Worth it! So put on your apron, crank up the music and get to it. You'll be glad. Here's what you need:

Sauce:

3 tablespoons butter

3/4 cup + 2 tablespoons flour

5 tablespoons Chile powder 

1 clove minced garlic (fresh of course) 

 1 tsp ground oregano

1/2 tsp ground cumin seed

1 1/2 qt water

Salt to taste, use plenty. be careful. 


Meat Mixture:

1 Lb lean ground beef, pork, or chicken.

Makes 12 to 14 enchiladas. Fry till lightly browned.

add salt, cumin, oregano,

minced garlic chopped

1/4 cup frozen corn kernels

1 Tbl spoon chopped scallion green

1 Tbl spoon chopped scallion white part

This recipe not hot! If you want fire this is the time to add yer favorite peppers.

Let the whole mix simmer about 10 min

You'll also need:

Grated sharp chedder cheese

Grated Monterey Jack cheese

Sliced black olives,

Whole black olives (fer garnish)

1 pkg CORN tortillas. (the rough kind)

Mix and bring sauce to a boil and cook, stirring constantly, until thickened (pudding consistancy)

Dip tortillas in and out of sauce quickly. On tortilla place 2T meat, a little scallion chopped, sliced olive, cheese and 2T sauce. (Avoid temptation to over stuff) Roll, placing one against the other in 12x13x9 baking pan. Pour remaining sauce over all. Place in 350 degree oven for 20 min. Remove and top with remaining cheese, more chopped scallions, and 2 whole black olives each. Return to oven for 5 min or until cheese melts. Serve with sour cream and (or) you favorite salsa. OLE!!

THE WORLD'S BEST COUNTRY FRIED STEAK RECIPE

1 Lb tenderized "cube" Steak

2 cups buttermilk or heavy cream

1 1/2 cups cooking oil

2 cups flour

1 tbl sp salt

1 1/2 tbl sp pepper

4 tbl sp paprika

1 tsp garlic salt

1 tbl sp dry mustard

1 tbl sp French Thyme, ground

1 tbl sp dried sweet basil, ground

1 tsp oregano, ground

1 tbl sp ginger, ground

Mix all dry ingredients.

Heat oil in deep fryer or 3 qt sauce pan

Dip meat slices in buttermilk then dredge in flour/seasoning mixture.

Fry at highest possible heat until golden brown and crispy.

Serve with country gravy and mashed potatoes (real, of course)
